Catching up

This has been a busy but relaxing week... I have actually cooked 3 homemade meals and not just thrown together salads all week. What a treat!

It has become a challenge for me to find ways to make meals that are gluten free. Sooo... this week I got all crazy and made a gluten free pizza crust that was killer!
I made homemade sauce:

I made two different pizzas.

Veggie

And Meaty

Like oh my these were good... it made so much though even after a few days we didn't finish them.

Second up this week for the cooking extravaganza was my favorite chicken and rice casserole. Keep in mind that Joe highly dislikes casseroles. He says that he prefers his food separated and not having all the flavors combined. However I LOVE LOVE LOVE this one.
if you like chicken, rice and mushrooms give it a try

I chop Garlic and onion and sweat them in a pot with some butter...
Then add in mushrooms so that they can meld with the flavors. I used a cup of rice this time which I cooked separate and then added into the mix with a large can of cream of mushroom soup. This time I only used one large chicken breast cut into small cubes and partly cooked in olive oil. Combine all ingredients into one bowl and bake for about 30 minutes. This will allow the chicken to finish cooking. You can also top with cheese ... this time I used a little bit of leftover white sharp chedder that needed to be used.

of course Joe opted out of enjoying this but i froze what I did not eat that night. I have heated some of this up two other times this week and its still as good as the first.

So easy and soooo good.

Last night I decided to use some more leftovers from the fridge and make another dinner. Go figure, Brookey Crocker over here.

I used everything pictured here except the parm. cheese.... it was not needed.

I cooked the onion and garlic in butter (shocker right?) I added in a slurry of milk and cornstarch because I had no cream... then I slowly added in two cups of milk, chopped mushrooms. How pretty is the tarragon and crushed red pepper in the pot? While this simmered and thickend I cut the potatoes...

And then I compiled everything into a baking dish

I actually had to bake this for over an hour because the tators too FOREVER!
However, when it was ready it was delish!

Ahh three cooked meals down in 5 nights that might be a record for me. I just find it pointless to cook most of the time because Joe is not home until much later at night.

in other news..

Last weekend one of the kittens, Sarabi, went to her new home with a great family and I am tickled pink  about it. Today the other two kittens went to a home together today with a nursing student at UGA. Joe and I are officially DONE fostering. I love it and maybe one day when we have a house we can try again but it is draining to take care of three pets on top of the 3 we already have. However, we enjoyed every minute of it and I feel bittersweet about it tonight. I do miss them all!

and for today's reason of why you should listen to your husband:
6 months ago when my foot problem originally had started the doctor said to do the hard-soled shoe so we went to the medical supply store in search of one. I was kinda not sure that it was really going to work and Joe suggested going ahead and getting a boot and I was like nah... I will go with what the Doc said. Well 6 months later and being in pain this entire time I finally got in with the specialist two weeks ago... we tried special insoles in my tennis shoes and there was no improvement so today I got the boot...  I walk like a fool but I will say when I took the boot off tonight and tried to walk on my foot normal just to get in the shower I realized how much pain I was really in... Not feeling any all day was great! We shall see how the net two weeks go until I go in for a recheck.

Whew I am tired that was a long post. Now time to finish this wine and get into bed... :)
